Healthy-ish Lemon Squares
Lemon squares are one of my all time favourite desserts! Now that it’s getting warmer in the city, I’ve been craving lemon squares. The citrus flavour has summer vibes ☀️ I’ve been experimenting with recipes that are low carb (grain-free) and low sugar. This one worked out well! Let me know if you try it out 💛
Base:
1/2 cup coconut flour
1/2 cup almond flour
1 scoop vanilla protein powder
1/2 cup softened unsalted butter
4 tbsp light maple syrup (or sugar free)
2 tbsp stevia
Bake 15 mins at 350
Lemon filling:
4 whole eggs
1 egg yolk
2 tbsp light maple syrup
1/4 cup stevia
1/4 cup melted butter
Juice of 2 lemons (or 1/2 cup)
Lemon zest (I like a strong lemon flavour so I add lots!)
1 heaping tbsp coconut flour
This should be a viscous liquid, add more flour (or psyllium husk) if it needs to be thicker
Whisk together and pour over warm crust
Bake 22 mins at 350, or until the lemon filling is somewhat solid (not watery in the middle if you shake the pan)
Sprinkle with stevia or powdered sugar
Chill for 2 hours
