Watermelon Mint Refresher

The hint of warm weather over the last few days has me acting like it’s summer. I did a little experimenting that resulted in this smoothie. It might be my favourite ever, and that’s saying a lot because I’m a smoothie fiend. It’s healthy and refreshing, but is more of a treat than a meal because I didn’t add protein to it. However, I did try a version with gin 😉 Let me know if you try it out!

Big handful of frozen watermelon cubes

1 mini cucumber

4-5 mint leaves (or more if you want!)

Juice of half a lime

1/2 cup of coconut water

1/2 cup of water (add more if it’s not blending smoothly)

A few ice cubes

Splash of agave (you don’t need this unless you want it a little sweet)
