I was experimenting in the kitchen and came up with these muffins, which actually turned out well! They have some added protein, and they incorporate my favourite fruit π Theyβre low calorie (~85 each), and can be made gluten free! Let me know if you try them βΊοΈ
Mash 2 overripe bananas
Mix in:
1 egg 2 tsp vanilla extract
1/2 cup plain Greek yogurt (I use lactose-free)
1/4 cup coconut milk (or other milk)
1 cup strawberries (chopped into small chunks)
Add in:
1 1/2 scoops of Alani Nu Fruity Cereal protein powder (or other protein, fruity or vanilla would work)
1/3 cup coconut flour
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Mix thoroughly until a smooth but thick batter has formed. If the batter is too thick, add a splash of milk. If itβs not thick enough, add a small amount of flour.
Divide into 12 muffin cups, 1/2 full. Sprinkle a pinch of shredded coconut on top (optional of course)! Bake at 350 for ~25 minutes or until you poke with a toothpick and it comes out clean. Cool and enjoy π
