Banana Chocolate Protein Muffins
These are so good! They are so rich and chocolatey, and definitely satisfy my chocolate cravings. They come in at ~130 cals, so not bad at all!
Mash 1 overripe banana
Mix in:
1 egg
1/4 cup plain green yogurt (I use lactose free)
1/4 cup coconut milk
1/4 cup light maple syrup
Add and mix:
1/2 cup coconut flour
1 scoop vegan chocolate protein
1/4 cup cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup dark chocolate chips
Mix together thoroughly
If too dry, add a splash of milk
If too wet, add small amount of coconut four
Fill 8 muffin cups 2/3 full
Press one banana slice gently onto the top of each muffin
Bake at 350 for 25 mins or until fully cooked
